persimmon salsa

Persimmons are one of my favorite foods. They come in season during the fall and are super sweet and delicious! You can use them for both sweet and savory dishes. This salsa/salad is full of flavor and color! Serve it as a side dish or snack or as a salsa for your favorite tortilla chips!

Makes around four servings


Ingredients:

  • four fuyu persimmons cut into small cubes

  • two small or one large heirloom tomato cut into small cubes

  • one tbsp minced fresh basil

  • two tbsp minced fresh cilantro

  • two tbsp fresh lime juice

  • one avocado sliced into small cubes

  • one tbsp extra virgin olive oil

  • sea salt

  • black pepper

Other possible add-ins:

  • goat cheese

  • feta cheese

  • microgreens

  • chopped red onion

  • crushed pistachios


Method:

  • In one large bowl, add all of the ingredients

  • mix everything together

  • serve as a side or a snack, or use as a salsa for tortilla chips (I love Siete tortilla chips!)
