pumpkin pie overnight oats

Overnight oats are a quick breakfast or snack; all you have to do in the morning is take them out of the fridge. These pumpkin pie overnight oats are simple and super easy to make! Plus, they are delicious and taste like pumpkin pie!

I love overnight oats because they are super easy to prep, require no cooking, and last up to around 5-7 days when stored in the fridge! If I have time on Sunday or any day, I like to make a few batches to have ready for breakfast throughout the week!

I store my overnight oats in mason jars!

(makes two servings)


Ingredients:

  • one cup gluten-free rolled oats

  • one cup plain pumpkin puree

  • two scoops of collagen powder

  • 1 1/2 cup almond milk

  • three tbsp chia seeds

  • three tbsp maple syrup

  • two tbsp cashew or almond butter

  • two tsp pumpkin pie spice

  • two tsp vanilla extract

  • 1/2 tsp turmeric powder

Optional toppings:

  • coconut yogurt

  • greek yogurt

  • more maple syrup

  • whipped cream

  • chopped walnuts

  • chopped pecans

  • cinnamon


Method:

  • in a medium-sized bowl, add all of the ingredients and mix

  • once combined, divide and pour the mixture into two mason jars

  • refrigerate overnight or for at least six hours

  • top with your favorite toppings
