single-serving apple crisp

This single-serving dessert tastes like fall and gives apple pie vibes! Plus, it’s full of gut-loving and nutritious whole-food ingredients! This recipe is gluten-free and can be made vegan. Multiply this recipe for a delicious Thanksgiving dessert.

Add some Greek yogurt for protein, and you can make this into a delicious fall breakfast!

Makes one serving


Ingredients

  • One large apple (my favorites to use are Fuji apples)

  • 1/4 cup of rolled oats

  • 1/8 cup (two tbsp) crushed walnuts

  • one tbsp pure maple syrup or raw honey

  • one tsp grass-fed ghee or coconut oil

  • one tsp vanilla extract

  • 1/2 tsp ceylon cinnamon

  • dash of pumpkin spice

  • tiny sprinkle of sea salt

Optional toppings:

  • coconut yogurt (my favorite is cocojune)

  • greek yogurt

  • whipped cream

  • vanilla ice cream

  • more chopped walnuts


Method:

  • preheat your oven to 380F

  • wash your apple and slice it directly down the center to make two halves

  • scoop a little out of the center to create a slight bowl shape (don’t scoop too deep; you don’t want to break the sides or bottom!)

  • set apple halves aside on a baking sheet

  • in a bowl, add oats, crushed walnuts, maple syrup, vanilla extract, coconut oil or ghee, cinnamon, pumpkin spice and sea salt

  • mix everything together

  • add oat mixture into the center of each 1/2 of apple

  • bake at 380F for 25-30 minutes

  • top with your favorite toppings and an extra sprinkle of cinnamon
