stuffed dates

Stuffed dates are one of my favorite snacks. They are quick and easy to make, full of nutrients, naturally sweet, and delicious. I love to make them before a workout or after a meal for a sweet treat!


Ingredients:

  • medjool dates

  • nut or seed butter (my favorites are sunflower seed butter, almond butter, and cashew butter)

  • cacao nibs or dark chocolate chips


Method:

  • open up each date and remove the pit

  • add some nut or seed butter inside

  • sprinkle cacao nibs or chocolate chips on top

Dates - fiber, selenium, magnesium, calcium, potassium, copper, phytonutrients, antioxidants, B vitamins (pantothenic acid, folate, and niacin)

Nut or seed butter - some protein, healthy fats, antioxidants (phytochemicals), vitamin E, vitamin B6, niacin and folate, magnesium, zinc, plant iron, calcium, copper, selenium, phosphorus and potassium

Cacao nibs - antioxidants, iron, protein, magnesium, potassium, fiber
