raspberry banana pancakes

These pink raspberry banana pancakes are a delicious and nutritious breakfast!

(makes about two medium pancakes - multiply the recipe for more)


Ingredients:

  • 1/2 large banana or one small banana

  • 1/2 cup fresh raspberries

  • two tbsp oat flour

  • two eggs

  • 1/2 tbsp pure maple syrup

  • 2 tsp vanilla extract

  • 1 tsp Ceylon cinnamon

  • optional: chocolate chips

  • optional: beet root powder (for extra pink color)

Topping ideas:

  • pure maple syrup

  • fresh raspberries

  • cacao nibs

  • chocolate chips

  • nut butter


Method:

  • wash your raspberries

  • in a bowl, mash banana and raspberries, then add in eggs, maple syrup and vanilla extract

  • wisk wet ingredients together

  • add oat flour, beet powder, and cinnamon to the bowl and mix until pancake batter forms

  • heat some ghee or butter in a frying pan

  • mix the batter once more, then, using a large spoon or 1/4 measuring cup, add batter to the pan to form your pancakes

  • after a few seconds, check your pancakes and flip them

  • repeat until the batter is used up

  • top with your favorite toppings and enjoy!
