lemon garlic salmon
This lemon garlic salmon is a delicious and flavorful source of protein. Paired with your favorite side dishes, it makes for a well-balanced meal. I love to serve a fresh Caprese salad or my radish salad with my salmon for a refreshing summer dinner.
(Serves 4)
Ingredients:
4 wild-caught salmon filets (frozen or fresh)
2 large lemons
around 5 fresh garlic cloves (finely minced)
one tbsp extra virgin olive oil ( and also use avocado oil, softened grass-fed butter, or softened ghee)
sea salt
black pepper
Method:
preheat oven to bake at 400 F (can also air fry at 400 F)
slice lemons so that you have around 12 thin slices (reference picture above)
finely mince your fresh garlic with sea salt into a paste
in a small bowl, whisk garlic paste into olive oil, avocado oil, butter, or ghee, and set aside
on a baking sheet lined with parchment paper, lay out salmon fillets
coat your salmon with 3/4 of the garlic mixture and sprinkle filets with a tiny bit of sea salt
lay thin lemon slices atop the salmon
drizzle any additional garlic mixture on the lemon slices, then sprinkle with sea salt and black pepper
if using fresh salmon, bake at 400 F for 15 minutes or until the thickest part of the salmon is 135 degrees F, then let rest for a few minutes
if using frozen salmon, bake at 400 F for around 20 minutes or until the thickest part of the salmon is 135 degrees F, then let rest for a few minutes
