fresh radish salad

This fresh radish salad uses seasonal spring ingredients. It's a simple, refreshing, and nutrient-dense addition to your meals.

(serves 2-3)


Ingredients:

  • sliced radishes (around 15 whole radishes)

  • microgreens (I used red cabbage microgreens from the garden)

  • around one tbsp extra virgin olive oil

  • 1/2 lemon

  • lemon zest

  • nutritional yeast

  • sea salt

  • black pepper


Method:

  • slice your radishes and lay them out on a plate or in a shallow bowl

  • scatter microgreens on top of the sliced radishes

  • squeeze lemon juice on the salad

  • drizzle with olive oil

  • sprinkle with sea salt, nutritional yeast, pepper, and lemon zest
