sweet potato dessert rounds

This is one of my favorite snacks to make when I want a little something sweet after dinner or before a workout! There are so many ways to customize this treat, + it is super nutritious! I love sweet potatoes, and them paired with nut or seed butter = perfection!


Ingredients:

  • one small sweet potato or 1/2 of a large one (I love garnett or japanese sweet potatoes)

    • tip: if you have leftover sweet potato, cook that too and store it for another day (storing cooked sweet potatoes in the fridge actually increases their resistant starch, making them better for digestion!)

    • you can also chop up the raw leftover sweet potato and freeze it to cook later

  • a bit of avocado oil or coconut oil

Toppings (pick and choose)

Method:

  • wash your sweet potato well and then slice it into rounds

  • coat rounds in avocado or coconut oil and bake or air-fry at 400 until caramelized and tender (around 20-30 min)

  • top with your favorite toppings (make sure to include a healthy fat such as nut or seed butter to make a balanced snack!)
