beet hummus
This hummus is easy to make and full of nutrients such as protein, manganese, folate, iron, potassium, and fiber. It is a flavorful snack or addition to meals throughout the week. Beets are in season, meaning they are extra delicious and nutritious!
Ingredients:
2-3 small steamed or pre-cooked beets (Love Beets are my favorite pre-cooked beets)
one can of chickpeas (drained and rinsed)
the juice of one lemon
around 3 tbsp extra virgin olive oil
one tbsp apple cider vinegar
one tbsp tahini
sea salt to taste
black pepper
Method:
if using fresh beets:
cut beets into cubes
in a steamer pot, cook beets until fork tender
once cooked, allow beets to cool
in a food processor, add all ingredients except for olive oil
begin blending, slowly adding olive oil until the desired consistency is reached
