beet hummus

This hummus is easy to make and full of nutrients such as protein, manganese, folate, iron, potassium, and fiber. It is a flavorful snack or addition to meals throughout the week. Beets are in season, meaning they are extra delicious and nutritious!


Ingredients:

  • 2-3 small steamed or pre-cooked beets (Love Beets are my favorite pre-cooked beets)

  • one can of chickpeas (drained and rinsed)

  • the juice of one lemon

  • around 3 tbsp extra virgin olive oil

  • one tbsp apple cider vinegar

  • one tbsp tahini

  • sea salt to taste

  • black pepper


Method:

  • if using fresh beets:

    • cut beets into cubes

    • in a steamer pot, cook beets until fork tender

    • once cooked, allow beets to cool

  • in a food processor, add all ingredients except for olive oil

  • begin blending, slowly adding olive oil until the desired consistency is reached
